Noodle meal in Tomato sauce (1tsp oil)

This is a highly nutritious meal which retains all the flavours, minerals and vitamins of all the veg. used in it. Once you boil th veg. you retain the stock and add it back to the final recipe. This saves you from losing the value of the ingredients.
You can make a non-veg. version of it using boneless chicken or sausages.
You need (choose your preferable quantity):
  • long and thin sliced carrot
  • 2 inch piece cauliflower
  • baby corn
  • mushroom sliced
  • 2 inch piece broccolli
  • ginger sliced
  • garlic crushed
  • french onion with stem cut half
  • 3/4 cup noodles (wheat or white flour based)
  • 1 tsp olive oil
  • 1/2 cup tomato puree
  • 1tsp vinegar (more to suit your taste)
  • salt to taste
How to make it? (for two):
  • boil noodles (for 2 people) in water mixed with salt
  • once done, drain it and wash it under cold water and keep in drainer
  • boil ginger, garlic, carrot, cauliflower and broccolli in water and salt
  • now add mushroom and french onion and retain the stock
  • heat a pan and add 1tsp olive oil
  • pour tomato puree in it and add some oregano, black pepper and salt
  • cook puree for 5 min and add the stock and veg.
  • let it boil and add few red fresh chillies, parsley or coriander, fresh mint, fresh basil, vinegar
  • serve the sauce poured on top of the noodle
  • Serve hot!!

Tip: add french onion stems to the water at the very begining along with hard veg. like carrot to get that aromatic flavour. Add the onions at a later stage.
