Ingredients: 500 gm white flour, 2 tsp dry yeast, 2 tsp salt, 3 tbsp olive oil, 325ml water, 2tbsp semolina, sesame seeds, dill weed and loads of love and patience
Time taken: 10 mins to make the dough
Proving Time: 10 mins
Baking Time: 15-20 mins
Mix yeast in 125ml water for 5 mins. Mix flour and salt and make a well and add yeast mixture along with remaining water. Mix into a sticky dough and move to the slightly floured surface. Keep adding water (1 tbsp if needed) to make a soft, elastic and shiny dough. Knead for 10mins. Now, leave the dough to rest for 10 mins under a tea towel.
Now, knead the dough again for 10 mins. Roll the dough into a rectangle 12inch*8inch and 1.5cm thick. Cover with tea tower and let it rest for 10 mins.
Prepare a baking sheet by applying little oil and dusting semolina on it.
Cut the dough rectangle length ways into four equal pieces, then cut each piece length ways into ten strips. Stretch each strip until its 10inch long. Now place the strips on the sheet at 1cm distance.
Take salted water and brush it on top of the strips. Shower sesame seeds and dill on various strips. Bake for 15-20 mins and let to cool on a rack. Store and eat whenever you feel like.
Tip: Have this with soup or drinks. They are light and hence you can easily afford this with a can of beer or a glass of mojito.
